MANGO RICE
A tasty twist on a basic staple
Feeds 4-6
2 cups uncooked rice
1 medium onion, diced
1 small green bell pepper, diced
1 medium tomato, peeled & diced
3 cloves minced garlic
2 tbsp olive oil
30 ozs chicken stock
¼ cup Pickapeppa Hot & Spicy Mango Sauce
Sauté onions and garlic in olive oil until onions are transparent
and garlic getting brown. Add vegetables and mix in. Then add rice
until rice is light brown. Add chicken stock to
Pickapeppa Hot &
Spicy Mango Sauce. Bring to a boil. Reduce heat and simmer until all
liquid is evaporated.
